We had to do it again. This wine is so good and is such a fantastic value, we are featuring another Opolo wine even though we featured two last month. How could we not? We just can't find wines of this quality at these prices very often so when we do, we have to jump on them.

The name Opolo is a nod to partner Rick Quinn's Yugoslavian heritage and is actually the name of a blended rose-style wine found on the Dalmatian Coast. However, Quinn has no plans to actually produce that wine, so we'll have to be content to just enjoy the name on the label.

He grew up in Duluth, in an Italian, Serbian and Croatian neighborhood. The families would make wine from grapes in their garage delivered from California by boxcar. By the time they got the grapes, they were already ferment! But, they did the best they could like most wine making families did in the old country.

Paso Robles Wine Country is one of the fastest growing premium vineyard and winery regions in California. The number of bonded wineries and wine grape acres in Paso Robles more than doubled between 1993 and 1997 and again from 1997 to 2014.

Paso Robles is situated 20 miles inland from the Pacific Ocean, halfway between Los Angeles and San Francisco. The climate and diverse soils provide optimal growing conditions for a number of varieties. Hot days are contrasted with coastal breezes which flow over the Santa Lucia Mountain Range to cool the vineyards in the evenings. Many different varieties of grapes are grown in Paso Robles with Cabernet Sauvignon, Chardonnay, Merlot and Zinfandel representing 80% of the planted acreage and some thirty-seven other varieties making up the remainder. This idea is changing as Rhone varietals such as Syrah and Grenache are establishing a foothold.

Our selection is a classic Merlot varietal. Soft and voluptuous in the mouth. At entry it continues to flourish as it blends with every pore. The finish seems to go on for minutes instead of seconds. This versatile offering can hit notes with a myriad of dishes from a charred steak to a delicate pork tenderloin.
