Grapes for our selection were harvested from California's finest Central Coast and Lodi Valleys. In these areas, warm days allow the grapes to ripen with complexity and richness of flavor while cool nights preserve the grapes' crisp acidity.

While the 2011 growing season was challenging for growers in many areas, California's Central Coast and Lodi saw an excellent growing season and harvested outstanding grapes as a result. The cooler than normal weather extended the growing season with most of the region's grapes harvested before the October rains. Thus resulting in grapes with excellent flavor development and maturity. Wines from 2011 tend to display ripe fruit aromas and flavor, richness and balanced acidity.

Grapes for this wine were handled gently to minimize bitterness and fermented warm to maximize color and flavor extraction. The firm structure of the Cabernet was tempered with a touch of Merlot which adds richness, smoothness and structure. The wine was aged for up to one year in new and used American and French oak.

Our selection is a produced from Cabernet grapes procured from several select vineyards in the Lodi, California's most up and coming wine appellation. This area is considered the Central Valley but shares a more temperate climate with Napa as the cool breezes from San Pablo Bay producing a much cooler growing condition than any area in its proximity.

Lodi is often, and mistakenly, though to be in the Central Valley, a rather hot and intemperate grape growing area. While it shares proximity to the Valley, its climate does not. Rather, it is more like Carneros in that the ocean breezes from the San Pablo Bay head straight for the vineyards, keeping temperatures 20+ degrees cooler than the Valley.

Cabernet Sauvignon is a natural here. It likes a bit of heat in the daytime but the cooler temperatures keep the natural acids at a higher level thus insuring longer lived and livelier tasting one.

Our superb Cabernet Sauvignon has true varietal character, great depth, intense flavor and a soft tannin structure. Enjoy superlative flavors of black cherry jam, bacon bits, coffee and dark chocolate. It is an absolute must with prime rib or rack of lamb.
