Once again, we feature another blockbuster from the heralded house of Elvio Olave, owner of Bodegas Las Pircas in Chile's most pristine wine sanctuary, the Maipo Valley. His 50+ years of winemaking experience shows in every wine, if not every sip. This particular venture, Las Pircas, was established a mere 20 years ago and, in that short time, it has earned a reputation for one of the most environmentally conscience wineries in Chile.
But, in his quest for perfection, Olave didn't stop at preserving the environment, he has also built a technological wonder that is both functional and efficient. Every energy-saving system incorporated to his winemaking process, no matter how small, has been utilized to its fullest. In other words, his attention to detail is flawless.
One of the many procedures in place, saving as much time and energy as possible, is the picking of the grapes early in the morning. When the grapes are cool, they are less prone to cracking while in the bins during the transportation to the winery, which could trigger an inadvertent fermentation. Picking in the early morning also allows the pickers to work under cooler conditions so the heat of the day doesn't tire them. It may be a small point, but it keeps things running smoother.
This selection is yet another stunning Cabernet from Olave. The flavors of ripe cherry, vanilla, and cocoa abound - making it a perfect union with a classic beef stew or braised short ribs.
