The name given to this wine, Terrapura, means "pure Earth," in Spanish. It was named as a testament to Chile's wonderful natural conditions for making great wines. The pure crystal water springs from the Andes nurtures the vineyards, which are also influenced by the cool ocean breezes of the Pacific Ocean. The country's exceptional climate has made Chile a recognized worldwide leader as a 'winemaker's paradise' for the production of premium wines. Started by Alfonso Undurraga Marimon in 2006, Terrapura consists of five valued price Chilean wines with the grapes coming from top vineyards in the Colchagua and Curico regions within the Central Valley of Chile. The grapes that comprise the Terrapura wines are carefully monitored by the Undurraga family. They work closely with the growers care and management of the vines in order to ensure that only the finest grapes are brought to the winery and vinified under strict guidelines. The Undurraga family owns over 2,000 acres of prime vineyards in Chile's foremost appellations, the Maipo and Colchagua Valleys. Since the beginning in 1885, the Undurraga tradition has taken hold, producing outstanding wines from some of the finest raw material on earth; grapes nurtured in the earth and sun of these fertile valleys. The Undurragas were early pioneers in Chilean winemaking, planting French varietals before the turn on the century and using wood barrels crafted by a master French cooper to age the wines and bring forward rich bouquet and flavors. In 1903, they were first to export wines to the U.S. The grapes for this single-vineyard wine come from Molina, located near the Andes Mountain in Curico Valley, situated half a mile south of Santiago. The grapes were hand-picked at the end of March, crushed and then underwent 4 hours of cold maceration, followed by pressing. Fermentation takes place at controlled temperatures in stainless steel tanks for 25 days, where it is always protected from air contact. The resulting wine stays 4 months in tanks with inner staves of French oak. This is a delicately scented Chardonnay with elusive notes that would favor dishes like the swordfish recipe on page 22.
