William Cole Vineyards lies deep within Chile's prestigious Casablanca Valley-often called "Chile's Burgundy." This cool climate vineyard near the coast comprises over 129 contiguous hectares and provides a long, warm growing season with cool nights to develop excellent acidity. Owned by Bill Cole and his Chilean family, the winery specializes in cool climate varieties. The winery produces Albamar Sauvignon Blanc, Chardonnay, Pinot Noir, and a limited release line called Columbine Reserve-featuring Sauvignon Blanc, Pinot Noir, and Cabernet Sauvignon. Coming soon are their tiny production "Bill" wines, aiming to be the very best from Chile.

After graduating as an agronomist from the University of Chile, winemaker Viviana Fonseca went on to work with a number of famous Chilean wineries for several harvests. From there, she was introduced to the winemaker at William Cole winery, Roberto Mill?n. The two of them hit it off immediately, and together accomplished a number of notable feats, including producing William Cole's much praised Sauvignon Blanc and advancing their already established reputation for Pinot Noirs. After four years together, Roberto passed the position of chief winemaker on to her. Viviana lives in Santiago and brings an impressive combination of passion and knowledge to William Cole.

Chile is becoming our "go to" place for Sauvignon Blanc lately. The robust flavors of stone fruit and the matching tingle of natural acidity envelopes the palate in nuanced flavors seldom found in wines in this price category.

The grapes for this selection were sourced from the Casablanca Valley situated only 3 miles from the Pacific Ocean. The cool microclimate allows the fruit to obtain optimum maturity and retain natural acidity; important to the production of high quality wines. The wine has a luminous green color and distinguished aromas of fresh asparagus, peppers, grapefruit and lemon. Rich mineral notes are present on the nose and mouth. This balanced wine offers a long elegant finish with citric notes and ample acidity accentuated. A perfect match for fried catfish.
