Deep ruby red hues usher in a spacious nose that displays intense dark berry and cassis, ending on vibrant notes of pipe tobacco and toasty oak. The harmonious, well balanced palate showcases sweet, silky tannins, perfectly integrated with a good acidity. The finale, rich in fruit and hinting of spice, is very lengthy and appealing.
Exceptionally warm winter weather brought an earlier than normal bud break, then abundant rains came in late February. Overall average temperatures and rainfall in the spring led to normal vine growth. Summer was warm, but without excessive heat spells, while significant day-night temperature differentials enabled the vines to maintain good acidity levels. No rain disturbed the harvest, which proceeded problem free.
The harvest began in early September for Merlot and ended in late September for our late-ripening variety, Cabernet Sauvignon. The grapes were picked by hand into 12kg crates, with separate harvest by variety and parcel. Quality selection of grapes preceded destemming, followed by maceration in stainless steel tanks at controlled temperature. Fermentation began at this point and lasted for about two weeks, followed by racking and transfer to oak barrels for malolactic fermentation. After 18 months of maturation, the individual lots were assembled, and the wine rested a further 6 months in bottle.
Perfect with all red meats and wild game, both braised and roasted, as well as with cold cuts, and with blue, medium- and well-aged cheeses.
