As we know, Bordeaux is a huge wine appellation with more than 12,000 producers including 8,000 separate Chateaux. They have a classification system that is quite complex, but it seems to work rather well. There are wines simply labeled Bordeaux, which can come from any area in the appellation. The Bordeaux Superieur classification is a step above. It has to be aged for at least one year in the bottle and aged for some time in oak barrels. This is not a guarantee of quality, but it almost always means that the wine is above the norm.

Our Dumas Cenot is certainly above the norm. It is situated on the Right Bank of Bordeaux and the Chateau was originally only a vineyard which sold their grapes to negociants who blended and bottled the finished wine. In 1969 it was purchased by Castle Dumas Cenot, which built the Chateaux and changed the name.

Castle Dumas Cenot controls no less than 25 properties mostly in Bordeaux which makes them a major player. This huge backing allows properties like Chateau Dumas to make use of technology that would not be economically feasible for a winery this size. However, that ownership makes is possible for the property to rise to its highest potential.

That is certainly the case here. From the clean, earthy aromas which can only come from Bordeaux to the classic plum and cherry flavors, it pleases every pour. It would do justice to steak Diane or a classic tenderloin in a red wine sauce.
