Our Supposition Cabernet Sauvignon comes to us from winemaker Miguel Besoain's vineyard called Los Morros. It is named after the town, which means "the hills" and refers to the rolling hills of vineyards that run alongside Miguel Besoain's family home in the Maipo Valley. Besoain's experience throughout Europe taught him a deep respect for the land on which he grows his grapes as well as preparing him for any sudden altercation Mother Nature may throw at him. As a result, he has become one of the most heralded winemakers in Chile for his delicate, European-influenced wines.

In the 1980's, Chilean wines hit the ground running, becoming the inexpensive choice for most wine drinkers. The quality of the wines caught the eye of many French and American winemakers such as Spain's Miguel Torres, France's Baron de Rothschild, Chateau Lafite, and Robert Mondavi, among others. Today, with foreign capital and joint ventures, Chile's wines are reaching an ever wider and more demanding audience. The soils here are composed from volcanic ash, which consists of sand and sandy loam soil. The vineyards are flat and receive excellent exposure to sunlight. The yields are carefully controlled to produce concentrated wines of excellent quality and elegance.

Cabernet Sauvignon is the star grape here. It accounts for most of the top wines from Chile and is now recognized around the world. Our selection is a classic rendition with all the ripe cherry and cranberry flavors we love in this grape. The finish begs for a chicken pot pie or duck confit pasta.
