Fuego Austral is also crafted by Ventisquero Estates, producers of our Rio Baker. It is a co-creation of winemakers Chilean born, Filipe Tosso, and superstar Australian winemaker, John Duval. Together they are producing some of the most exciting wines in the country. The winery was founded just 20 years ago by Martin and Eduardo Silva. The vineyard was planted in 1998 and the winery completed in 2000. Their first wines went to market in 2001. Since then, this combination of wine greats has had one hit after another.
The Silvas did it right from the start. They decided to plant sustainably and organically. This is easier to do than converting a non-organic vineyard into one that is. It is also more expensive initially, but saves a vast sum in the long run. Once the vineyard is planted, you must identify your enemies.These are insects, some microscopic, that only exist to interrupt the vines mission of producing perfect grapes. Fortunately, they are all known, as are their natural predators. Next, the work begins to produce colonies of those predators so that they flourish and respond to the vines enemies. The same must be done by planting beneficial grasses and shrubs which use little water and obscure the enemy plants that rob the vine of water.
Once all this work is completed, we're ready to make wine. Our selection is a powerful expression of the grape with all the lovely white peach and citrus flavors powering through the crisp acidity and waiting for steamed mussels in white wine and garlic.
