Located near San Pablo Bay, which spills into the San Francisco Bay, the vineyard is cooled by maritime breezes and fog, which allow the olives to slowly ripen to develop complex flavors. Grgich farms all of their land naturally, without artificial pesticides or herbicides, and the olives are certified organic.
Grgich Hills Estate keep the olive trees pruned low enough so that they can hand pick the olives, unlike the vast majority of olives that are harvested mechanically, which often damages the fruit. Following the traditional Tuscan way, they hand harvested the entire field blend at once, rather than the harvesting each variety at different times, resulting in more interesting and delicious tasting oil.
