Cave Beaumont du Ventoux is a small cooperative winery located in a vineyard at the foot of Mont Ventoux. It currently represents 85 wine producers from the towns of Beaumont du Ventoux, Malaucene, Le Barroux, Crestet, Entrechaux and Mollans-sur-Ouveze.For many local winemakers with small holdings, producing and selling wine on their own is often not a realistic possibility. Pooling their resources just makes sense. In France, winemaking cooperatives (typically called "caves cooperatives") produce more than half the total amount of French wine. Our selection was created using traditional winemaking methods, with a maceration of 25 days of skin contact. Further extraction of flavors took place by racking the wine at the beginning and the end of fermentation. The wine was then aged for 12 months in oak barrels and another six months in concrete vats before bottling.Cheeses such as cheddar, camembert, and brie go well with this wine. Pair this wine with braises and stews, such as slow cooked roasted lamb or even make a delicious goulash. You can also make a great reduction sauce with this wine by reducing it with shallots, rosemary and butter to go over meats such as pheasant or venison. Our selection is a rich and elegant blend of spice and ripe fruit. Very deep purple in color, the nose suggests a harmonious mixture of gentle spices and juicy fruit. The palate is rich, deep, and sophisticated, with a touch of oak. It has persistence and structure from the front to the rear of your palate, lifted by balanced freshness at the end.
