Our selection comes to us from a 60-year-old cooperative nestled in the hills of Florence, the capital of Tuscany. It is one of the first wine operations that began as totally organic instead of converting from traditional farming.
This is important because when you plan an organic vineyard you seldom need to worry about something new that crops up unexpectedly because you have already planned for it, and this makes things easier. One of the most important aspects is raising colonies of insects that are the predators of the insects that can harm your vineyard. You place these colonies where they need to be.
Next you plant water-conserving cover crops that inhibit certain weeds and plants that can steal water from your vines. All this takes time and patience, but the results are worth it. Herbicides and pesticides have become so expensive they can actually impact the price of the wine. Ca' dei Mona has no such concerns.
This wine offers classic ripe berry with backbone and earth tones in perfect harmony. The richly textured mid-palate allows the taster to enjoy this beauty with dishes like turkey carnitas, pork ribs in barbeque sauce or lentil soup.
