Jacob Beringer came to Napa in 1868 enticed by the soil and climate conditions for growing high-quality grapes. He would know. He came from Mainz, Germany, one of the greatest vineyard sites there is. Today, Beringer is considered one of the great wineries of the world and for good reason. They have never faltered.

Among their many firsts in wine: they were the first to use gravity feed instead of pumps in 1936. This is significant because this process introduces less air into the wine and air is wine's number one enemy.

They've been making Cabernet Sauvignon from Knights Valley since 1974. It has become such a benchmark for California that they single-handedly were responsible for it becoming its own appellation in 1983. It is interesting to note here that Knights Valley is located in Sonoma County, not Napa. Its location, which is east of Alexander Valley, is very similar to Napa and most can't tell the difference.

Regardless of where the appellation is located, Beringer Knights Valley is considered a top-tier California Cabernet. It is now carefully blended with 9% Merlot, 6% Cabernet Franc, and 1% Petite Verdot to make it a significant Bordeaux blend.

The operative word here is balance. From the fresh boysenberry and blackberry nose through to the enticing plum and currants on the palate and the final blast of dark chocolate, it pleases at every pour. This lovely amalgam would just expand with a rare prime rib or a filet with peppercorn and cognac sauce.
