Jeff Smith made his first vintage of Hourglass in 1997 with winemaker Bob Foley. Both are Napa natives. In 2006, he purchased the Blueline Estate, which is now the Hourglass winery and his base of operations.

He added another layer of expertise to his estate by hiring Tony Biagi, one of the most revered winemakers in Napa. Most people think that making wine is a matter of crushing grapes, fermenting them, and eventually bottling. They don't realize that each barrel houses a slightly different wine. Blending these different wines is where the real creativity comes through and Biagi is known as one of the best anywhere in doing so.

Hourglass doesn't have any Sauvignon Blanc in their vineyard. But, they are just a grape's throw from Larkmead, one of the best Sauvignon Blanc producers in Napa, sporting 50-year old vines, and the oldest in Napa. The deal with Larkmead was struck in 2014 and they've been making outstanding Sauvignon Blanc together ever since.

Again, blending is the key here. A small percentage of the Sauvignon Blanc is known as the Musque clone. It is an intensely aromatic and profusive grape. Adding a little goes a long way. Then the 4% Semillon adds another layer of flavor and a broader dimension.The results are nothing short of astounding. From the freshly cut green grass to the fresh herbs layered with swatches of spice and a phenomenal floral component, you have a classic worthy of a plate of Kumamoto oysters, Chilean sea bass or seared ahi with soy and wasabi.
