Aviary is the brainchild of Greg Ahn and Brian Lewis. Greg was a corporate entrepreneur who escaped the stranglehold of business life and traded it for a place in the country. Little did he know that even the serenity of the wine business has its own set of battles to contend with.
In Greg's case, it was alcohol content. Wine needs a certain amount of alcohol. Lately, because of warmer climates, it can get out of balance with the delicacy most winemakers are trying to achieve. Training the leaves of the vine to shield the clusters from the sun is a natural solution, but an expensive one. It seems to be the only way Greg can do things. In other words, the right way. Even a 1% reduction in alcohol makes a difference.
Brian has spent a quarter century in the wine business, seeing it grow from a cottage industry to the behemoth it is today. With over 1,000 wineries in Napa, the competition is incredible. Guiding a small operation through the maze can be daunting at best.
All we have to do is taste the results and those, in this case, are spectacular. Our selection is 100% Cabernet Sauvignon grown on hillsides, plains and mountain tops. Each area puts an imprint on the grapes and thus expands the flavors and textures of the final wine.
This selection is nothing short of amazing, with layers of complex flavors held in check by the lilting, yet evident, tannins.
