This superb Sauvignon Blanc was crafted by winemaker Andy Jones. Though Andy has been making great wines for years, his early career in Napa started after he graduated from culinary school and worked as assistant food and beverage manager at Solage Calistoga, an exclusive hotel in Napa featuring a Michelin-rated restaurant. It was there that Andy became interested in great wines, eventually leading him to winemaking and Sebright Cellars.
Sebright Cellars is located at the northernmost area of Napa Valley, in Calistoga. This appellation is one of the oldest in Napa as well as one of the most respected. The grapes for our selection were grown near Garnett Creek Farm. The name "Sebright," in fact, is a reference to the farm's award-winning Silver Sebright bantam chickens, raised on the property for over 100 years.
Sebright's vineyards are farmed biodynamically and sustainably. Every detail in the vineyard is analyzed and scrutinized in order to determine the best growing conditions for the grapes.
Our selection was cool fermented, which increases fermentation time and flavor. The small bits of seeds and stems fall to the bottom of the fermentation vats, but are stirred daily. This process increases the complexity of the finished wine, particularly building mid-palate texture.
The results are nothing short of mesmerizing. Essences of fresh herbs and spice integrated with white peach and lime zest, combine to create an offering that's simply heavenly.
