Like most wines from Burgundy, our selection is made by a negociant. This person buys small lots of wine from various producers and blends them to his or her liking. There are very few estates here because the average holding is less than two acres from which you cannot make more than 240 cases of wine.

So, the most important person here is the negociant. Many vineyard "owners" might literally own five or six rows of vines. So, they make the wine at a coop and wait for the negociant to taste and buy. This is not a job for a newbie.

Guy Azera is our negociant here. He's been doing this for 40 years and feels he is just getting the hang of it. Just think for a moment of tasting five or six wines, deciding which would blend together and then how long the wine will age and what it will become. Oh, and then wait four years to sell it. I know, I'm sugarcoating it.

But this is Burgundy, the holy grail of wine. It is labeled simply Bourgogne, which means it could have come from anywhere in Burgundy. But our selection came from vineyards just outside of Vosne-Romanee, one of the best villages in the area. Consequently, this wine has a breed way above its station. It's classic wild cherry and soft vanilla with cinnamon and currant are unmistakable and thoroughly delightful with quail or roast duck.
