Our selection comes from the iconic Burgundy producer, Collin-Bourisset, which was founded in 1821. It started as just Bourisset and continued for most of the 19th Century until the family partnered with an international merchant, Pierre Collin, and that's when they became known.

Collin was not in the wine business. He was in the paper business; however, he had offices in England, Belgium and Switzerland-all large wine markets. So, the partnership flourished as it purchased more property in Burgundy, which today is probably the most expensive vineyard property in the world.

The two families worked together for almost a century until the last Collin passed away with no heirs and the operation is now completely run by the Bourisset family. They kept the name out of respect for the partnership which was crucial to their success.

The name, L'Incontournable, translates into "unstoppable," which is apt considering their longevity and position. Along the way they partnered with other estates like this one in the Languedoc from which our selection hails.

As the label clearly states, it is 100% Cinsault, which is not a household name here, but very highly thought of in the Rhone. It provides the backbone to many exalted wines like Chateauneuf-du-Pape. Surprisingly, it also makes a spectacular rose. The flavors are a bit bolder than most roses, but still has the lilting cherry blossom and fresh fruit aspects of a classic rose. With fish or fowl, or all by itself, it tastes as good as it looks.
