In 2015, Alex Remy finally realized his dream of becoming a winemaker when he took over Atlas Wine Company, producers of our Oro Bello. His French background instilled a deep belief that wine was made to drink and enjoy in a reasonable environment and at a reasonable price. Atlas was his chance to prove that and he certainly did it.
His Master's degree in food science was the impetus he used to craft wine that went with food, not against it. Acid is an important part of wine because it cleanses the palate so that the next bite can be enjoyed. Without acid, food builds up on the taste buds causing the taster to taste less of the food. This is what causes many to over salt their food.
Alex uses minimum intervention in his winemaking to produce as natural a product as possible. Of course, it doesn't hurt to be working with Pinot Noir grapes from Sonoma's Russian River. All the grapes are estate-grown, produced and bottled at the winery, in classic French tradition.
Our selection is a lovely rendition of a firm, dry rose. There is the telltale rose petal in the nose, sweet/tart cherry on the palate and a tangerine finish. It beckons seared ahi with crushed sesame seeds and black pepper or saut?ed, boneless chicken thighs in a light tarragon sauce and a splash of rose.
