The Baldini Estate was founded in the 17th Century on the hills between Reggio and Parma, two of the most iconic words in cheese. The property was in the Baldini Family for over 300 years until it was sold to Giuseppe and Julia Prestia due to not having any offspring left to take over. The Prestia's honored the family's wishes, focusing on creating only wines of the highest quality and keeping the vineyards organic.

Lambrusco was enormously popular in the US in the 80's. But it was nothing like what was drank in Italy. The wines sent to the US were industrial wines, fashioned in huge quantities by large co-operatives. They were over produced, over manipulated, and frequently pasteurized. All of these imposters were exported to the United States, much to the disgust of those who loved the few made properly. It has only been due to the persistence of estates like Baldini, that real Lambrusco is still produced. That would be a light, refreshing, and petillant offering similar to Moscato d'Asti.

Things got so out of hand that in 2013, the Italian government stepped in and passed clauses in the labeling laws regarding point of origin and grape varieties. Like most grapes, there are clones that are slightly different from each other. Lambrusco would now only use these clones. The main one was the Lambrusco Salamino, from which our selection is crafted. You are immediately struck by the manner in which the light reflects off the effervescence. The flavors of peach nectar, cherry blossom, and pineapple form a refreshing amalgam suitable for anything from a shrimp cocktail to tuna poke.
