Domaine du Somail is a coming together of similar passions in the creation of a whole which is greater than the sum of its parts. Francois Fabre had a successful career as an agricultural engineer. His training was an outgrowth of his early life growing up on his family estate in the Minervois, a sub-region of the Languedoc.
That upbringing stuck with him until he decided to settle down where he grew up, taking over the family property. It also helped to bring other talented people into the fold and help build a great property.
It was an arduous task, first by converting to organic and then biodynamic farming. But the results have paid off. Their 37-acre estate is now one of the jewels of the Minervois, considered the best appellation in the Languedoc. As a result, it was one of the first here to be given AOC status in 1985.
It's one thing to go out and spend a bunch of money to buy something that is already an icon. It's quite another to build it from the ground up using your heritage as a base. That's precisely what we have here.
Mourvedre provides the first sensation of ripe grapes followed by strawberry and floral notes. The addition of 20% Syrah brings backbone and earth that finishes with presence, grace and complexity complimenting roast lamb or wild turkey.
