Once in a while, we will be accused of having the best job in the world. Who's to argue when all you do is sit around and taste wine all day. Nothing could be further from the truth. Obviously, the business side is quite daunting in trying to get selections, prices, and delivery of the wines we want to offer.

Of course, there are many upsides. One of them is offering wines like Thymiopoulos. It's a wine like this that is the reason The Wine of the Month Club was founded over 50 years ago. Most people would walk past a wine they have never heard of and is especially difficult to pronounce.

Xinomavro is certainly one of those wines, yet it is one of the most incredible selections we've ever offered. Its name means "acid black" referring to its acidity and dark color. It is the only variety to be grown in Naoussa. That suits Apostolos Thymiopoulos just fine. After graduating from the University of Athens oenology program, he set out to produce his own wine in the place of his birth.

His first vintage was in 2004 and was an instant hit in Europe. Though the Xinomavro grape has a reputation for its acidity, Apostolos tamed it by allowing the wine to go through a secondary fermentation, which converts the harsh malic acid to the creamier lactic acid.

This conversion is what gives Xinomavro its silkiness yet doesn't hide its imposing power. Complex essences of cherry, plum and blackberry permeate at every turn. The long finish begs for a classic Greek leg of lamb slathered in garlic.
