Elizabeth Spencer Winery was founded in 1998 by the husband and wife team of Spencer Graham and Elizabeth Pressler. Both had careers in the wine industry, so the jump to making their own wine wasn't as daunting as it was for others. They certainly weren't winemaking pioneers in Napa, but they were when the subject turned to organic farming and sustainable agriculture. They were one of the first to join the CCOF, California Certified Organic Farmers organization. And, also one of the first to be certified for Demeter processing which is a biodynamic group.
Their winery boasts a zero carbon footprint, a feat rarely seen in agriculture. They purchase grapes only from organic and biodynamic vineyards to assure that all their wines adhere to the tenets that the organizations they belong to are followed= precisely. They made their reputation on Cabernet Sauvignon as that grape is synonymous with Napa Valley. However, it's always interesting to note that at some point in time every Napa producer turns to Sauvignon Blanc as their next conquest. It seems to be the natural order of things.
Our selection includes grapes from Napa, but also from other organic areas in the North Coast. Our 100% Sauvignon Blanc was held in stainless steel tanks and saw no oak up through bottling. That suits us just fine. This treatment shows off the enticing minerality of the wine along with its precious amalgam of melon, Fuji apple, and white peach. It would capture the moment when paired with sizzling, spicy shrimp or orange chicken.
