Fattoria Pagano was founded in 2001 by Antonio Pagano. It is located in the commune of Casale di Carinola, thirty miles north of Naples. Fattoria Pagano cultivates Aglianico, Piedirosso, and Falanghina alongside older vineyards that have produced local wines for 70 years. These vineyards, in the shadow of the dormant Roccamonfina volcano, experience hot days and cool nights, resulting in particularly fragrant wines. The unique characteristics of this wine from Fattoria Pagano-distinct flavors, aging potential, and good minerality result from the volcanic soil, which is composed of pozzolanic ash and lapilli.

Aglianico is one of Italy's most revered varietals and is found almost exclusively in the southern regions of Campania and Basilicata. Aglianico is noted for its rustic and earth-driven flavors and like Nebbiolo in the north, it is noted for its ability to enhance with age. As the tannins soften over time, the fruit and floral aromas emerge. Recently, winemakers have learned different methods to handle Aglianico's tannins and make wines that can be enjoyed immediately.

This wine is superbly structured with subtle, rounded tannins and good minerality. There are fresh aromas of wild berry, red fruit, cherry and a hint of anise before darker fruits and earth emerge. The palate offers ripe black plum, espresso and vanilla. Pair this wine with some beef brisket and roasted mushrooms, or herb and garlic cauliflower rice. Cheeses such as pecorino, grana padano, and aged cheddar will also complement this wine nicely.
