It's one thing to be sustainable, another to be organic and biodynamic. We applaud all those attributes. But, owner Robert Eden has crafted a winery like no other in the world. It is completely built of hemp bricks, which passively consumes CO-2 and is impenetrable making it unnecessary for heating or cooling. All this and fireproof as well.
Maris is located in the Minervois, a sub-region of the Languedoc in southern France. His vineyards are a typical mix of different grapes, though mostly Rhone varietals, along with various topographies and microclimates. He boasts some of the oldest vines in France as well.
Our selection is his only one made from Bordeaux varietals. It comes in at 80% Merlot and 20% Cabernet Sauvignon. At 14 years, these vines are at their peak of production and crafting the best wines of their lives.
Obviously, the meticulousness of Eden's winery is a precursor to how he crafts his wine. First, he restricts the number of grape clusters per vine by intensive pruning to 2.9 tons to the acre. This is less than what is allowed for the first-growth Bordeaux. Picking is done by hand and then placed on a conveyor belt for sorting before fermentation.
With that kind of detail, one would expect a grand and glorious wine and one would not be disappointed. The accuracy of flavors is staggering. From the cranberry and blueberry to the violets and roses, the wine soars into the palate and waits for grilled lamb loin or a wild mushroom ragout.
