Topico is crafted by the co-op, Bodegas La Remediadora, founded in 1946 in Spain's La Mancha district, one of the most up and coming wine areas in the country. There are over 350 members in the cooperative who farm more than 3500 acres of vineyards all of which is organic.
Located in central Spain, La Mancha is quite arid, meaning that there is very little rain fall. This condition would be quite poor for growing row crops, but the best for growing wine grape. As the roots of the vine dig deeper into the soil in search of water, they send back vital nutrients to the branches above ground making them more viable and disease resistant.
Sauvignon Blanc is a relatively new addition in Spain's wine portfolio and it's always exciting to try this grape from different locales. This one is a standout. The beauty of Sauvignon Blanc is that it is very adaptable to wildly different climates and soils. But, its ability to showcase those soils and give a different twist to the wine is remarkable.
The grapes are harvested at night to retain the necessary acids that make the wine finish with flourish. It is then fermented on the skins to add texture and body, then finished in stainless steel vats.
The result is a stunning array of soil and grape that adds another dimension to Sauvignon Blanc. Telltale hints of fresh herbs and peach with a swash of apricot and lime to finish of a plate of charcuterie or sauteed mushrooms.
