Claude Val is a signature wine from Domaine Paul Mas. Jean-Claude is the charismatic fourth-generation owner based in Pezenas, Languedoc. His earliest memories are of running away from his mother to join his grandfather in the cellar during harvest. Before taking over the family business, Jean-Claude started a wine club in Northern France, an organic wine import company, and worked in the French consulate in Miami, developing the import of French wine and food products. He also learned the craft of blending wines from the Italian master Girgio Grai. For his efforts, Jean- Claude Mas is known as a pioneer from the New Languedoc, the New wave of French wines, and reestablishing Languedoc as a central locus for French wine.
Claude Val wines are made with grapes selected from the best Languedoc vineyards: Limoux, Carcassonne / Puicheric (Minervois), and Pezenas. Wine has been made here for two thousand years. Utilizing modern equipment and the traditional expertise from a team of oenologists, Claude Val wines are expressive and carefully made. Calling on expertise in blending, this red is 50% Grenache, with Carignan, Syrah, and Merlot. Each variety is vinified separately through the process of destemming and short skin contact at controlled temperatures for the Grenache and Merlot and 6 to 8 days skin contact for the Carignan and Syrah. The whole process is designed to respect the natural fruit aromas while using only natural and mechanical methods. Blending is done in November and then aged in stainless steel vats for at least four months before it is bottled.
This wine is light garnet red with purple tints at the edge. The nose is complex with notes of plum and raspberry that evolve into soft spices. On the palate, it is fruity, rich, and round. The finish is smooth and well-balanced, finishing on licorice notes. Claude Val will suit perfectly all-white meat dishes, grilled meat, salads and appetizers, soft and medium-strength cheeses.
