It comes from Tempranillo vineyards, over 30 years old with yields of less than 4.500 kilos per hectare, located in 6 different towns along the Ribera del Duero. Different soils, altitudes, different solar exposures,.. that add complexity to the final wine. Each origin is elaborated and aged separately, enhancing and preserving its virtues so that they are shown in the final wine.
The plots are harvested at their optimum moment of maturity, after strict analytical control and tasting in the field, at which point the grape expresses its best qualities. Manual harvest that is selected at the entrance of the winery, leaving only the clusters that present excellent health and maturity. After destemming, the production is carried out by gravity without the use of aggressive pumping that mistreats the grape. The total maceration is around 18 days.
