Grapes are harvested by machine at night: a permanent quest for the best conditions to preserve the utmost grape quality. This method is best to keep the grapes at a low temperature and to press its juice before the heat of the day prevalent in September in this area.
Located in the heart of the Var region; vine-growing began in St. Martin during roman times. The Monks of Lerins intensified the production and built an amazing cellar in the 15th century. The chateau's reputation, however, is largely due to the family tradition of winemaking that has gone uninterrupted since the 18th century, and has made the Chateau St. Martin an elite Classified Growth.
The Chateau de Saint-Martin vineyard is spread at an altitude of 130 meters above sea level and situated at the junction of two geological zones which specifically gives its wine character which identity and authenticity are jealously preserved. Clear and brilliant golden color with silvery reflections, intense and greedy nose marked by white flowers, honeysuckle and jasmine; 2nd nose more fruity on mandarin peel. Ample and full on the palate with smoothness and substance with good acidity on citrus fruits with a dominant kumquat.
